3 Ways to Make Chi Sau more Dynamic:

Off-angle by turning their body or moving your body around theirs
Make use of all 4 'slots' - straight or cross, inside or outside control
1 – Go between upper and lower strikes

Create a dilemma for your opponent between hitting above or below the 2nd centreline.
This is especially useful if your are shorter than your opponent, or want to get them to defend low.
2 – Off-angle by turning their body or moving your body around theirs

Look to create angles by either making your opponent turn through hand fighting, or by stepping around them e.g. with Zi Zi Ma.
3 – Make use of all 4 'slots'

Often people get into the habit of staying with straight ('same side') control, or cross, outside control ('diagonal, outside').
Make sure to switch things up with cross, inside control especially e.g. hau pak sau, as that will create even more problems for your opponent.
Conclusion
Try to create dilemmas for your opponent in all of the above areas, while trying to off-balance and hit your opponent safely, and you will overwhelm them much easier.
